Charcuterie, as defined in Michael Ruhlman and Brian Polcyn’s eponymous book, is the craft of salting, smoking, and curing meats. Once a necessity for survival, the advent of refrigeration slowly relegated charcuterie to a dying art. Our job, now, is to resurrect that art. We will strive to preserve this way of life by injecting spirit into our food preparation–consciously focusing on the cycle of birth, death, and rebirth shared by all.
